“พะโล้เนื้อ” จะกินให้อร่อย ต้องทิ้งไว้ข้ามคืน

พะโล้กับต้มเค็มนี้เป็นสองเรื่อง แต่มักเอามาปนเปกัน ต้มเค็มเป็นกับข้าวไทย หรือจะพูดให้ถูก คือเป็นกับข้าวภูมิภาคสุวรรณภูมิมานานช้า เดิมเนื้อที่ต้มเค็มเป็นสัตว์น้ำ กุ้งและปลา เช่น ปลาทูหรือปลาตะเพียน ไข่ไก่ ไข่เป็ด หรือเต้าหู้ก็ไม่ใส่ จนภายหลังเมื่อเรือขายหมู ขายไข่ เต้าหู้ ของคนจีนเข้ามา จึงมาเติมในหม้อต้มเค็ม แล้วในที่สุดก็รับเครื่องพะโล้ ที่คนจีนทำเป็ดพะโล้ ลงเอยเป็นหม้อพะโล้ตามร้านข้าวแกงอย่างทุกวันนี้

เราอยู่กับพะโล้หมูมานาน จนคราวหนึ่งผมได้ไปงานมงคลของอิสลาม เจอพะโล้เนื้อ อร่อยครับ เลยอยากขยายมาให้ทำกันบ้าง

จะซื้อเนื้อผมไปตลาดสดอ่อนนุช มีเจ้าประจำขายเนื้อราคาไม่แรงเหมือนห้าง สันใน เนื้อตะโพก ทำกับข้าวไม่เหนียว กิโลละ 250 บาท เนื้อสามชั้นต้องเคี่ยวหน่อย 230 เอาอย่างหลังมาครึ่งโล

เต้าหู้ทอดพวง 26 บาท ไข่ไก่ เบอร์ 2 ถุง 10 ฟอง 45 บาท ไม่ถูก แต่จะซื้อยกถาด 30 ฟอง 85 บาท หอบหิ้วขึ้นรถไฟฟ้าไม่ไหว รากผักชี กำละ 10 บาท ผงเครื่องพะโล้ 20 บาท

เมื่อถึงบ้าน ก่อนอื่นใด ให้ล้างเนื้อแล้วหั่นเป็นก้อนเต๋าขนาดใหญ่กว่าคำเล็กน้อย เพราะเคี่ยวแล้วเนื้อจะหด ลงหม้อลวกน้ำเดือดเสียทีหนึ่ง ฟองเลือดทิ้งไปด้วย แล้วค่อยตั้งน้ำใหม่ ใส่เนื้อลงไปให้น้ำเดือดแล้วหรี่ เคี่ยวจนกว่าจะเปื่อยนุ่ม ถ้ามีหม้อความดันจะเร็วขึ้นมาก เพียง 20 นาทีใช้ได้แล้ว นานกว่านี้ เนื้อยุ่ยไม่ทันได้เคี้ยว

อีกหม้อหนึ่งต้มไข่ เอามาแช่น้ำเย็นจะได้ปอกเปลือกได้ง่าย

น้ำเดียวกันนั้น ลงเต้าหู้พวง ช้อนมาแช่น้ำเย็น บีบน้ำมันที่อมอยู่ในเนื้อเต้าหู้ออก จะได้ไม่หืนน้ำมันโรงงาน และทำให้เต้าหู้มีโพรงซับน้ำพะโล้ได้เต็มๆ

ขณะรอเคี่ยวเนื้อ ล้างรากผักชี หั่นฝอยลงโขลกกับกระเทียม 5-6 กลีบ พริกไทยเม็ดและเกลือสมุทรอย่างละ 1 ช้อนชา แหลกดีแล้วเอาลงผัดน้ำมันเล็กน้อยในกระทะพร้อมกับผงเครื่องพะโล้ อย่ากลัวน้ำมัน เพราะเนื้อสามชั้นไขมันไม่มากเหมือนหมูสามชั้น ผัดจนเครื่องหอม ลงน้ำตาลปี๊บ 1 ช้อนโต๊ะพูนๆ เคี่ยวให้น้ำตาลละลาย เดือดปุดๆ เติมน้ำปลา 1 ช้อนโต๊ะ ลงไข่ต้ม เติมซีอิ๊วดำหวานและซีอิ๊วดำเค็มอย่างละช้อนโต๊ะ ผัดเคล้าให้น้ำต้มเค็มและเครื่องพะโล้รัดไข่ต้มเป็นสีน้ำตาลทั่วทั้งฟอง

เมื่อเนื้อเคี่ยวได้ที่แล้ว เททั้งหมดในกระทะลงหม้อเคี่ยวเนื้อ ที่ให้ลงเนื้อตอนนี้ เพราะถ้ายังไม่เปื่อย ลงไปโดนเครื่องรัดเนื้อ เคี่ยวเท่าไร เนื้อก็ไม่เปื่อย เคี้ยวกันเมื่อยกรามแน่

แล้วจึงลงเต้าหู้ทอดพวง อย่าลืมบีบน้ำทิ้งก่อนทุกก้อน แล้วเคี่ยวต่อไปสักพัก

ปรุงรส เค็มนำ หวานตาม เผ็ดพริกไทย หอมเครื่องต้มเค็มสดและผงพะโล้ ค่อยปิดไฟ

อยากกินตอนนี้ก็ได้ แต่จะให้ดี ทิ้งข้ามคืนค่อยตักมากินร้อนๆ กับข้าวตอนเช้า ชีวิตจะมีความหมายขึ้นมากทีเดียว

Braised Beef in Five-spice

 Five-spice soup Paloh and Tom Khem (Salty Caramelized Soup) are two different dishes but erratically mingled. Tom Khem is Thai, or, more accurately, has been a dish of the Golden Peninsula for ages. Originally the meat used was marine animal – shrimp or fish-mackerel or silver barb. No chicken or duck egg was used, neither was fried tofu. Only later when the Chinese boat vendor of pork, egg and tofu started paddled were they added into Tom Khem. Later still, the five-spice condiment from Chinese five-spice duck was adopted and ended up as Paloh pot in today’s food shop.

We have been with Paloh Muh for so long, until I attended an Islamic feast and found braised beef in five-spice Paloh Nua, it was so good it should be relayed for your table.

For beef I went to On-Nut market; where a regular vendor does not charge as high as in super market: sirloin and rump sells here for 250 Baht, brisket 230 which I bought half a kilo.

Fried tofu 26 Baht; chicken egg #2 10-egg bag 45 Baht, not cheap but I couldn’t buy a tray of 30 eggs at 85 and carry on BTS; coriander root 10 Baht a bunch; five-spice powder 20.

Back home, first, rinse the beef and dice a bit larger than bite-size since it shrinks when braised. Blanch in boiling water to rid off scum. Set another boiling pot, add beef until it boils then simmer; braise until soft. A pressure cooker takes less time, only 20 minutes; longer and the meat is too mushy for chewing.

Boil eggs in another pot; submerge in cold water for shelling ease.

Use the same pot to blanch dried tofu. Again, cool it and press out putrid frying oil from factory; besides, hollow tofu absorbs more of the Paloh soup.

While braising beef, rinse coriander roots, chop and pound with 5-6 garlic cloves and 1 tsp each of pepper corn and rock salt. Once fine, fry the mixture with five-spice powder in a wok. Wary ye not of the new frying oil because beef brisket has less fat than pork belly. When the fried mixture permeates, add 1 tbs palm sugar; until it caramelizes add 1 tbs fish sauce and boiled eggs, then 1 tbs each of dark sweet soy sauce and dark salty soy sauce. Stir to coat eggs completely with sauce and Paloh mixture.

When beef is well braised, add all from the wok. The transfer now is because if the meat is not yet tender, the mixture will glaze the meat and takes forever to tenderize.

Then, add dried tofu, not forgetting to press out water. Simmer on a little while.

Season to salty – sweet – pepper hot – Tom Khem and Paloh aromatic; turn off heat.

It’s ready to serve, but, a lot better if left overnight, to serve hot with rice in the morning; adding another essence to life.
